My workout buddy mentioned it one day so I searched around and compared recipes and came up with my own unique twist. This is <em>meatloaf <\/em>baked in muffin tins. Easily portable, they are delicious hot or cold and we gobble them up atop a mountain of spinach for breakfast, with a small baked sweet potato and asparagus spears for lunch<a href=\"https:\/\/doubleeaglefitness.com\/new\/wp-content\/uploads\/2012\/03\/IMG_0710.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-1804\" title=\"IMG_0710\" src=\"https:\/\/doubleeaglefitness.com\/new\/wp-content\/uploads\/2012\/03\/IMG_0710-1024x764.jpg\" alt=\"\" width=\"1024\" height=\"764\" srcset=\"https:\/\/doubleeaglefitness.com\/wp-content\/uploads\/2012\/03\/IMG_0710-1024x764.jpg 1024w, https:\/\/doubleeaglefitness.com\/wp-content\/uploads\/2012\/03\/IMG_0710-300x224.jpg 300w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a> or dinner. Using the food processor, shred one onion, 2 carrots, and 2 small zucchini squash. Saute with 2 cups sliced mushrooms, salt, pepper, red pepper flakes, basil, and oregano.<\/p><\/div>\n<div id=\"attachment_1052\" style=\"width: 234px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/wed-blog-010.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1052\" class=\"size-medium wp-image-1052\" title=\"Wed Blog 010\" src=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/wed-blog-010.jpg?w=224\" alt=\"\" width=\"224\" height=\"300\" \/><\/a><p id=\"caption-attachment-1052\" class=\"wp-caption-text\">Mix vegetables and 1 egg with two pounds of organic grass-fed ground beef (we used Tara Firma Farms). Go nuts if you want&#8211;add fresh herbs, garlic, or sun-dried tomatoes. Spray the muffin tin.
