Call it a frittata or a crustless, cheeseless Quiche, call it something you make up. I keep the cheese out of it because we don&#8217;t eat dairy. I made this twice this week. The first one had broccoli florets, shredded broccoli stalks, garlic, fresh cilantro, salt, and pepper. The second one was even <em>better<\/em> with an entire bag of frozen spinach, sun-dried tomatoes, one diced up large link of sausage, and lots of garlic. When it comes out of the oven and cools, I slice it into 4 large slices. We took them with us for snacks. Here&#8217;s how to make it:<\/p>\n<div id=\"attachment_1026\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/img_0715.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1026\" class=\"size-medium wp-image-1026\" title=\"IMG_0715\" src=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/img_0715.jpg?w=300\" alt=\"\" width=\"300\" height=\"224\" \/><\/a><p id=\"caption-attachment-1026\" class=\"wp-caption-text\">Crack six eggs into a bowl and add 1\/2 cup of canned coconut milk<\/p><\/div>\n<div id=\"attachment_1028\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/img_0716.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1028\" class=\"size-medium wp-image-1028\" title=\"IMG_0716\" src=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/img_0716.jpg?w=300\" alt=\"\" width=\"300\" height=\"224\" \/><\/a><p id=\"caption-attachment-1028\" class=\"wp-caption-text\">Stir fry frozen spinach, sun-dried, tomatoes, and garlic in some olive oil. Pick your own combinations--mushrooms, zucchini, broccoli, add tons of vegetables and fresh basil, cilantro, and garlic.<\/p><\/div>\n<div id=\"attachment_1029\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/img_0718.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1029\" class=\"size-medium wp-image-1029\" title=\"IMG_0718\" src=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/img_0718.jpg?w=300\" alt=\"\" width=\"300\" height=\"224\" \/><\/a><p id=\"caption-attachment-1029\" class=\"wp-caption-text\">Slowly incorporate the vegetable mixture into the well-whisked egg and coconut milk mix. Combine quickly to avoid cooking the eggs.<\/p><\/div>\n<div id=\"attachment_1030\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/img_0711.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1030\" class=\"size-medium wp-image-1030\" title=\"IMG_0711\" src=\"http:\/\/doubleeaglefitness.files.wordpress.com\/2012\/03\/img_0711.jpg?w=300\" alt=\"\" width=\"300\" height=\"224\" \/><\/a><p id=\"caption-attachment-1030\" class=\"wp-caption-text\">Bake at 350 degrees for 33 minutes give or take a few until the top is golden brown at the edges.
