So many of you have been asking me for the non-dairy, paleo, super healthy, chocolate pudding recipe and here it is! Most of us don’t see pudding when looking at ripe to overripe avocados. We do! To perfect this recipe, I tried multiple paleo chocolate puddings and here’s the Double Eagle tweak on the best pudding ever!

You will need: 3 ripe avocados, 1 ripe banana, 1/2 to an entire can of full fat coconut milk, raw honey or stevia, lots of cinnamon, good quality cocoa powder to taste, organic vanilla extract, and a hand blender. I don’t measure ingredients  I eyeball.

Combine all ingredients into a mixing bowl. You will have to make this a few times to find the best combination of coconut milk–Beqir loves to make a large batch using 3 avocados and the entire can of coconut milk which yields at least 8-9 servings. You may also make a single serving to satisfy a little sweet craving with half an avocado and half a banana and 1/4 cup coconut milk. EXPERIMENT!

Using a hand blender, mix well. Careful not to splatter it all over the kitchen wall as I did just now!

 

This pudding is chock full of vitamins, minerals, and monounsaturated (HEALTHY) fats! Grab a 1/2 cup and ONLY eat that because it’s addictive! If you eat the entire bowl containing 3 avocados, 1 banana, whole can of full fat coconut milk, honey, cocoa powder–that’s 1546 kcals! You WILL gain weight by overeating on healthy food too! Put the spoon down and eat 1/2 cup at a time!
